Ilaria Cappellacci e Le Ricette Svelate: Cassoni romagnoli senza strutto

I cassoni o crescioni romagnoli sono una sorta di calzoni, ma cotti in padella e preparati con il lievito istantaneo, quindi velocissimi da realizzare.
L’impasto ricorda quello della piadina, ma io li ho preparati senza strutto, usando l’olio extravergine di oliva, quindi leggeri e digeribili.
Per il ripieno dei cassoni o crescioni romagnoli ho scelto, diciamo, quello tradizionale, preparato con erbette cotte e formaggio filante.
Avevo la cicorietta in frigo, quindi ho pensato: quale miglior modo per riciclarla?

Ovviamente voi potete optare per prosciutto cotto e formaggio, oppure funghi…qualsiasi ripieno si abbina perfettamente al sapore delicato dei cassoni o crescioni romagnoli.
